Leek - Onion Soup

Leeks are a well-known vegetable - some even claim it is a superfood.

Chefs love using it for its unique flavour and it can be found in many kitchens as a common vegetable but are we aware of its superfood qualities?

What makes a leeks a superfood is its properties. It is a good source of Vitamin A, C and K. It also contains minerals like iron and manganese and they are high in fibre.

For our soup, we will use onions and garlic as well. These two vegetables are great immune boosters and rich in vitamins and minerals. Onions are a great source of Vitamin C, B6, Potassium and folate.

And garlic is rich in Vitamin C, B6, thiamin, potassium, phosphorous, calcium, manganese and copper.


In fact, this soup can have a positive impact on lowering high blood pressure, cholesterol levels, the formation of blood clot; it can also increase brain function and regulate blood sugar levels.


This being said eating this soup once a week won't benefit you to the fullest if you keep certain habits in your lifestyle that are detrimental to your wellbeing. Only a wholistic lifestyle will help for good prevention and healing.


You will need:


1 Leek

1 Onion

3 cloves of Garlic

a bit seasoning like Himalayan salt/vegetable stock or swiss vegetable bouillon

1 litre Water


- Cut the leek, onion and garlic in small to medium size pieces( it should fit on your spoon).

- Place it in a pot with water and a bit of seasoning and cook it on medium heat for 15 - 20 minutes until the vegetables are cooked.

- you can eat it just like this or puree it.

- Bon appetite!
